INGREDIENTS

  • 200g  mackerel
  • 60g green apples
  • 1 red onion
  • 100g water
  • 100g white vinegar
  • 90g brown sugar
  • 2 cloves
  • 2 Laurel leaves
  • 5ml olive oil
  • Salt
  • 3/4 lettuce leaves to decorate

Boil vinegar, water, sugar and salt together to make a sweet and sour sauce. Turn off flame.

Clean, cut and boil onions in water for a few minutes. Drain and leave to cool. Place onions in sweet and sour sauce and leave to cool.

Clean and remove bones from mackerel. Before eating it raw, place in a freezer for 24 hours. Defrost and remove any left over bones. Place in a bowl and add lemon juice, olive oil and salt. Mix and leave to rest for a few minutes. Cut apple into small slices.
Serve the tartar with sliced apple, sweet and sour apples and garnish with lettuce.
This dish can be served  with carbohydrates e.g., whole grain rice or bread.
