GREEN AND LEMON ICICLES WITH GINGER AND BLACK PEPPER
- 5 lemons
- 3 green lemons
- 30g peeled and sliced ginger
- 160ml Water
- 10g ”millefiori’ Honey
- 3 Crushed pepper corns
- Mint leaves
- Energy value 20 Kcal per serving
- Features: Rich in flavor thanks to the presence of herbs and ginger
- Ideal as: snack
Wash the lemons well.
Grate the peel and set apart. Crush the lemons lightly on the table. Squeeze and filter juice.
Heat the water and honey in a pot. Let the honey melt, but don’t bring to boil.
Add zest from green and yellow lemon, ginger and pepper corns. Add mint if desired.
Leave to blend for at least 30′ and strain.
Now you have to decide on your preferred mould.
I love it in cubes… I normally use disposable freezer bags that allow me to have aromatic cubes readily available to add to a glass of water or simply to dissolve in the mouth. The addition of mint helps to contract the bitter flavour of lemons. You can crush the frozen cubes to make an aromatic ‘granita’.
