Citrus salad has always been a great solution.
It can be proposed both as a starter when combined with crispy salads and seasoned with oil and vinegar, and as a meal end when combined with a lemon sorbet.

During this operation the citrus fruits will lose juice, which it will be advisable to recover by peeling over a container.
Cut the apple into cubes and put them in the fruit juice.
You are ready to serv as you like.
If you opt for the salty choice with the recovered juice make a vinaigrette by emulsifying the juice with oil, salt and seasoning.
If you choose the dessert, add honey to the juice, emulsify it and use it to season the citrus fruits, then add the lemon sorbet.
Personally, I opt for the salty!
