CHOCOLATE PUDDING WITH COCOA BEAN CRUMBLE AND MINT
INGREDIENTS
- 350g organic almond milk
- 20g organic bitter cocoa powder
- 40g dark chocolate
- 30g sugar
- 5g Agar agar powder
- 50g dried cocoa beans
- Fresh mint

METHOD
Place almond milk, cocoa, sugar, chopped dark chocolate and Agar Agar in a pot.
Bring to a boil over low heat while mixing with a kitchen whisk. Boil for 2 maximum 3 minutes while mixing. Remove from heat and rest for 1 minute.
Pour sauce into the serving glasses and leave to cool in the refrigerator for at least 3 hours.
With a mortar or mixer, crush the cocoa-dried to make a ‘crumble effect’.
Before serving, add crumble cocoa powder over pudding. Decorate with mint leaves.
