MUSHROOM SOUP
INGREDIENTS
- 250g Mixed mushrooms
- 2 Potatoes (250g)
- Parsley
- 1/2 liter of Broth
- 2 tbsp extra virgin olive oil
- 2 garlic cloves
- 1 Tablespoon of soy sauce
- Salt
- Pepper

METHOD
Clean mushrooms thoroughly. Remove end part the stem. Wash them briefly under fresh running water and slice.
Wash the potatoes, peel them and cut them into small cubes.
Wash and finely chop parsley. Heat the broth.
Put olive oil in pot, add garlic and brown.
Remove garlic before adding potatoes and mushrooms. Fry ingredients for a couple of minutes over a high heat, stirring constantly.
Add a tablespoon of soya sauce and mix well. Add heated broth.
Add a pinch of salt, a tablespoon of chopped parsley. Place lid on pot and cook over medium heat for 15 minutes. Mix from time to time. If desired, add pepper.
