INGREDIENTS

  • 100g oatmeal
  • 120g almond cream
  • 25g Chia seeds
  • 25g Sunflower Seeds
  • 30g coconut oil
  • 20g almonds
  • 60g Maple syrup
  • Almond milk without added sugars
  • Almond grains

METHOD

Blend all the ‘energy bites’ ingredients for 5-10 seconds.
Roll mixture into small balls of about 25 grams each. Dip them firstly in almond milk and then roll in almond grains. Keep in the refrigerator for at least 30 minutes.

PROPERTIES

These recipes which were presented after the congress cooking show have a common denominator: the presence of ingredients, such as coconut oil/cream which are rich in medium chain triglycerides (MCT).

Why are these medium chain triglycerides so useful in the case of pancreatic tumor or pancreatitis? They are recommended when there is an altered digestion of fats resulting in steatorrhea and reduced absorption of fat-soluble vitamins (ADEK). These triglycerides are an easily available source of energy and are more easily absorbed than long-chain ones because they do not require emulsion from bile acids.

Coconut oil contains, not only MCT but also oleic acid, linoleic acid, traces of vitamin E, potassium, iron, magnesium and selenium. The avocado in the first recipe, is rich in fat-soluble vitamins (A-E) and water-soluble vitamin(C), omega-3, linoleic acid, calcium, potassium, magnesium and phosphorus.

It is always recommended to refer to a trusted nutritionist along with a specialist doctor who will dose the pancreatic enzymes appropriately.
