METHOD
Wash and steam the asparagus for 10 minutes. Alternatively, they can be stewed with 400 ml of water for 15 minutes. Do not drain. Leave them cool in their cooking water.
Blend the asparagus without draining so as to preserve their nutrients. Strain to eliminate filaments. Add extra virgin olive oil and parmesan. Mix well to obtain a thick and homogeneous mixture.
In the meantime, cook the pasta. Put the pesto in a pan and add two ladles of cooking water. Mix well. Add pasta and mix again.
PROPERTIES
Pain killers are frequently used by patients with pancreatic tumors. However, one of the sides effects is constipation. To treat this symptom, patients often use laxatives that are not always effective.
In this phase, an ad-hoc diet which is rich in fibers and liquids combined with medical therapy, all play a very important role.
There are different types of fibers: soluble and insoluble. The soluble ones e.g. pectin, mucilage, gums, beta-glucans and arabinoxylans are found in oats, artichokes, legumes and fruit. They are more fermentable and increase the viscosity of the intestinal content without stimulating intestinal transit.
The insoluble ones, such as lignin and cellulose are found for example in oat flakes, bran, asparagus and legumes. They absorb and retain water in the lumen of the intestinal tract, increase the volume and the softness of the fecal mass and increase the speed of the intestinal transit.
There is a high quantity of insoluble fibers (1.57g / 100 p.e.) in this recipe. Asparagus is a good source of potassium, phosphorus, calcium, magnesium, folic acid, vitamin C and carotenoids.
This dish provides a very important source of energy for patients with its calories and proteins.
It is important to refer to a trusted nutritionist and specialist doctor who may increase the dosage of pancreatic enzymes.
